Gluten Free Zucchini Bread
Ingredients:
1 stick butter
or butter substitute
2 c sugar
4 eggs
1 tsp vanilla
3 1/2 c gluten free flour
1 tsp xanthan gum
1 tsp salt
1 tsp soda
1/2 tsp nutmeg
3 tsp cinnamon
2 c finely grated zucchini
1 c chopped walnuts
Directions:
- Cream together the butter and sugar then beat in the eggs and vanilla.
- Combine the dry ingredients in a separate bowl.
- Add half of the dry ingredients to the wet ingredients and then add the zucchini.
- Add the rest of the dry ingredients and nuts, mix well.
- Grease 2 bread pans and divide the dough evenly.
- Use a wet spatula to smooth down the top.
- Bake and 350 for 50-60 minutes
After I greased my bread pans I put a layer of walnuts and sugar on the bottom.
