We have a big bag of quinoa from Costco that we’re still learning to like. My husband said this recipe was good because it masked the flavor enough for him to actually enjoy it.
1 cup Quinoa, rinsed
2 1/2 cup Water
1 Apple, chopped
1/4 cup Raisins
1 tsp Cinnamon
1 tsp Vanilla
1 tbsp Brown Sugar
1/4 cup chopped Walnuts
- Toast the nuts and set them aside.
- Combine the rest of the ingredients in a medium sized pot.
- Bring to a boil, cover and reduce heat. Simmer for 17 minutes.
- Sprinkle with nuts and you can also serve with yogurt or milk
