This is my mother-in-law’s cookie recipe that I just substituted my favorite gluten free flour blend . Everyone that tried them would never have guessed they were gluten free!!
1 stick of butter
2/3 cup brown sugar
1/2 cup white sugar
2 tsp vanilla
2 cups of a gluten free flour mix
1/4 tsp salt
1/2 tsp baking soda
1 cup chocolate chips
Cream together the butter and sugars. add vanilla and egg and beat for 4 minutes. add the dry ingredients and then stir in the chocolate chips. Spread a cookie sheet with parchment paper and place the cookies evenly apart. makes 24 cookies.
Preheat the oven to 350
bake 8 minutes for a chewy cookie or bake 10 minutes for a crispy cookie.
