My friend Rhonda made these the other day, and they were so good I was only able to sneak one away for a picture before they were gone!

1 3/4 cup raw cashews (chopped in a blender)
3/4 cup raw coconut
1/4 cup coconut oil (a little softened)
1/4 cup raw honey
mini dark chocolate chips, optional

Mix, scoop and refrigerate!
