1 3-4lb Chuck Roast.
Salt and Pepper it and brown it on all sides (about 4 minutes on each side, medium high heat)
Let the roast rest on a plate while you add 1 sliced onion to the pot with a little oil to get up the brown bits from the bottom of the pan.
Once the onions are brown add 2 cups of water and 1 tsp thyme to the water.
Place the roast crock pot, cover it with sliced onion/water mxture (add more water until the roast is completely covered) and cook for 12-14 hours on low.
