5 pounds red potatoes, cut up
½ cup olive oil
2 cloves smashed garlic
- Stir oil and garlic together.
- In a large bowl toss the potatoes together with the oil and garlic.
- Salt lightly.
- Place in 2 parchment paper lined 9×13 pans.
- Bake covered with foil 40 minutes at 425 degrees.
- Remove foil and bake another 30 minutes.
- Top with 2 cups grated cheddar cheese and bacon bits.
- Bake another 5 minutes until cheese is melted.
- Serve with sour cream and other favorite toppings.
