1 stick butter
or butter substitute
2 c sugar
4 eggs
1 tsp vanilla
3 1/2 c gluten free flour
1 tsp xanthan gum
1 tsp salt
1 tsp soda
1/2 tsp nutmeg
3 tsp cinnamon
2 c finely grated zucchini
1 c chopped walnuts


  1. Cream together the butter and sugar then beat in the eggs and vanilla.
  2. Combine the dry ingredients in a separate bowl.
  3. Add half of the dry ingredients to the wet ingredients and then add the zucchini.
  4. Add the rest of the dry ingredients and nuts, mix well.
  5. Grease 2 bread pans and divide the dough evenly.
  6. Use a wet spatula to smooth down the top.
  7. Bake and 350 for 50-60 minutes

After I greased my bread pans I put a layer of walnuts and sugar on the bottom.
