My mother-in-law was introducing all the Candyland characters to my son as they played this morning. Gloppy the Molasses Monster seemed to be his favorite and he wanted to know all about molasses.
She told him the next time he came over she would show him some molasses and then suggested they make some gluten free molasses cookies. About 5 minutes later I got an email from her daughter who had just made some and was so excited that they turned out good. I thought it was extremely ironic… but another successful recipe to post!
Molasses Crinkles:
1/2 c butter, softened
1/4 c shortening
1 c packed brown sugar
1/4 c. dark molasses
1 egg
2 c GF flour mix
1/4 c shortening
1 c packed brown sugar
1/4 c. dark molasses

2 c GF flour mix
1 tsp xanthan gum
1/4 tsp salt
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. cloves
1 tsp. ginger
1/4 tsp salt
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. cloves
1 tsp. ginger
1. Cream the butter, shortening and sugar together.
2. Add the molasses and the egg to the mixture.
3. Combine all the dry ingredients together and then mix everything together.
4. Roll into small balls then roll in granulated sugar. place on cookie sheet lined with parchment paper.
5. Bake at 375 for about 9 minutes.
