wheat free carrot cake

Gluten Free Carrot Cake

3 cups gluten free flour mix
2 cups sugar
1 teaspoon salt
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1 & 1/3 cup oil
4 eggs
2 cups shredded carrot
2 teaspoons vanilla

In large bowl combine the dry ingredients.
Add the oil, eggs, carrot, and vanilla. Mix until ingredients are moistened.
Bake at 350 in greased 9 x 13 inch pan 45 – 50 minutes or until toothpick comes out clean.
(Do not move cake while it’s baking, or it may fall in the middle.)
Cool and frost.

Cream Cheese Frosting

6 ounces organic cream cheese
1 teaspoon vanilla
¼ cup organic butter
3 cups powdered sugar
1 ½ cups walnuts [optional]

Beat well, and add nuts if desired. Spread on cooled cake.
