loaded roasted potatoes


5 pounds red potatoes, cut up
½ cup olive oil
2 cloves smashed garlic


  1. Stir oil and garlic together.
  2. In a large bowl toss the potatoes together with the oil and garlic.
  3. Salt lightly.
  4. Place in 2 parchment paper lined 9×13 pans.
  5. Bake covered with foil 40 minutes at 425 degrees.
  6. Remove foil and bake another 30 minutes.
  7. Top with 2 cups grated cheddar cheese and bacon bits.
  8. Bake another 5 minutes until cheese is melted.
  9. Serve with sour cream and other favorite toppings.
